Today I made a salad which surprisingly I've never thought to make which is strange because salad is probably the most vegan food like ever. Anyway it was delicious and I really love salads because they are a great delicious way to get veggies in :)

today I made vegan pasta (chickpea pasta) with vegan feta and tomatoes. Honestly it was really good but the vegan feta was a little bland (I'm pretty sure it was just tofu with some seasoning) so next time I'll get a different kind or just make it myself. overall 6/10

Today I made protein coffee, i was in the mood for something simple and a drink and this was perfect so overall, 10/10 very happy.

today I made potato spinach pancakes made with an egg substitute, I am currently working on an actual vegan pancake recipe but deiced it would be better to go the savory route first as a good test run. 10/10

Today I made rainbow bagels with my brother, it was probably the longest recipe I ever made because if the separation fi the dough with the food dye. Overall i think it turned out so well and definitely a 10/10

Today I made coffee milk, I wanted top give a vegan drink that was similar to coffee a try because I wanted a vegan energy boost and I believe that I have found that so I was super happy that it ended up working out. Overall it was a 10/10 and I am so happy with the way it tasted.

This week my first recipe was a birthday cake flavored oat cake. Oat cakes are probably my favorite vegan cake to make, I've been a little sad recently and oat cakes really cheer me up so I was very happy to make this and it even tasted really good so 10/10.

Today I decided to go savory and make cauliflower wings:) It took a little while but it turned out well, next time I should cook them a little longer but I was impatient. Overall it was very good and I'd really love to make this again.

Today I decided to take the dessert route and make one of my favorite things to eat, cookie dough! I took a few tries to get it to come it well, I made a sugar cookie dough and the picture is after I put it in the fridge to get a better texture but I'm very happy with how it came out :)

So today, I wanted to come up with a sustainable vegan way to make milk for daily use and the recipes I create on here. I always have oats and am a big fan of oats so I quickly decided pat milk would be the best for today. It didn't come out perfect but I reflected on my mistakes in the video and will try again soon :)

This was the last oat cake I will be making, I just wanted to give the chocolate one a shot before I ended he series. I'm happy I did, it wasn't my favorite one that I've ever made but it was definitely really good. This week I will focus on more savory dishes and I plan to give mac and cheese another shot so stay tuned:)

Today I made a cinnamon lava oat cake. I'm very into making pat cakes lately because I love cake and if I can find a way to eat it in a healthy vegan way then I'll do that :) It was made with a lot of fun ingredients but one of them was one I haven't used yet which was applesauce and I thought that was such a great idea and it added so much flavor and was so good so overall I'd say 10/10

Today I made an oat cake :) it was tiny but very delicious. I don't know what I was really expecting but I didn't really expect it to actually taste like cake, it was so strange, Overall I'm so happy this worked out and my favorite thing is that its a cake I could and will eat for breakfast :)

Today I made veggie spring rolls with rice paper. I know it doesn't look great but it was actually very good, it was one of my first times working with rice paper and it took a few tries to figure it out but I eventually got it but I definitely do need more work on it :)

Today I made a recipe that will probably become a staple breakfast in my life. One of my friends sent it to me, and I was a little skeptical at first but it kind of tasted like vanilla cake which was pretty awesome and I really loved that about this. So overall I would say it was a very successful recipe.

Today I made a vegan coffee cake, it turned out really good and was very yummy. I had it as a dessert at a restaurant I went to when I was in seventh grade, but this time I obviously made it vegan. It was good but it didn't look that great so I added frosting over it and made it look like a mouse. I think it turned out pretty cute, I probably would make it again but it was a lot of work.

So this did fail. But its okay because after further review, I understand what I did wrong and I will be trying it again because it tasted very good it just didn't happen correctly. I have much more hope for this recipe than I did any other recipe which is a pretty optimistic feeling :)

Today I attempted making tofu once again. I think it went pretty well but I haven't quite gotten it. I didn't press it for as long as it should've been pressed so it was a little watery but that was okay. I seasoned it pretty well and I did like it but the thought of it replacing meat in the long run does make me nervous and I don't think I could do that. But overall, I think this went pretty well.

This was my most successful recipe yet, I'd like to call them no make vegan protein brownie bites, they were so good and actually weren't too bad for you. I was shocked by how good they were. I'm actually very proud of myself because sometimes (a lot of the time so far) my recipes haven't turned out great. Sometimes they can be tolerable but not something I'd make again but this time I actually plan on making this again it was so good!

so today I made juice and it was very yummy, it was pretty quick so the video is pretty quick. it was something I really enjoyed which was a nice change. I'm going to incorporate it into my everyday routine because it made me happy and pretty full of energy and it tasted kind of like water and pineapples but it didn't taste like kale so that was great :)

I was so excited for this recipe because tapioca pearls go in my favorite drink and I had so much hope. Unfortunately, this failed miserably. I'm not totally sure what I did wrong but I really would love to give it another shot because I really feel like I could do this and I'm not ready to give it up.

I made this vegan smoothie and I drink it every night but today I made a vegan version and I think I'll start only drinking the vegan version! It was really good, the recipe was a few frozen bananas, 1 cup almond milk, a scoop of peanut butter and vanilla extract. It was really good and tasted similar to a vanilla milkshake, the frozen bananas gave it an ice cream like texture and it was so good!

So today I made vegan mac and cheese, and it wasn't a fail but I also wouldn't say that it was a success. It was pretty hard and I don't think I miss mac and cheese enough to make it again. It was a lot of effort and it was made with nuts but it didn't taste like it, so I was impressed. It didn't taste a lot like cheese and it had a weird after taste but I thought it was still decent.

In this video I made chia seed pudding, it seemed like it would be good but it was pretty bad, I hated the texture and I overall just think its not for me. Usually when a recipe fails I reflect on it and think about if I could do things differently but I just think that this was a fail and I don't think there is any saving it. I hated everything about it and it was just so bad.

These past few weeks, I've decided to learn the vegan staple meal, tofu. Tofu is flavorless and is made with soybeans so it will taste like what you cook it with. This was my third attempt at trying to successfully make tofu the first few times I added way too much corn starch and it came out tasting like, well corn starch, so it was a complete fail. This time I added nutritional yeast, onion powder, garlic powder and salt and pepper mixed with breadcrumbs. I then baked them in the oven and they actually came out pretty well! They were not perfect and I still have a lot of learning to do when it comes to tofu but I'm excited to keep going :)

In this weeks post I decided to make a quick cooking video on my experience on making vegan peanut butter cups. It was a very simple recipe because I wanted to keep the video pretty brief but I promise more advanced recipes are coming very soon. they turned out pretty well and my brother actually ended up eating a lot of them so I would say this recipe was a success. :)

Today I made my first vegan recipe! I made a cake! Its a small cake but its a cake! I did mess up quite a lot, the first time I made it, it was really raw on the inside but somehow burnt on the outside so I had to toss it. The second time I made it, I went really well but I had to watch it so carefully in the oven and eventually I was able to frost it! It looks so good and I can't wait to try it and do more recipes :)

So, I began my new project today, and that will be learning how to make advanced vegan recipes that taste really good. This was an option I came up with when I was brainstorming and it was in my top 10 so I'm very excited. My focus is very specific and I hope it will set me apart from my other classmates who may be doing cooking. My goal is to create recipes that taste amazing and are completely vegan. I've been wanting to go vegan a long time but at my age and lack of resources I really cant so I'm hoping this will help with finding affordable vegan foods:)

I have a few ideas for my new project and I'll be narrowing them down tonight and making my first official new project post tomorrow. Its really sad that I wasn't able to do my gold award project right now, it would've been nice to get it done. With that being said, I know I made the right decision I'd much rather change the course right now before its too late. I'm excited about my new project and I cannot wait to get started!

Right now, because of COVID my project has become a lot more complicated to complete. Still, I'm persevering. My first project that I'm set to complete is collecting books for Mason, as of right now I have not heard back from the librarian but its still early. I can't go out collecting books because of the virus, so I started making a list and collecting books in my own home that my siblings and I don't want anymore. We all had books that we read in childhood but now I am 17 and my siblings are all in their 20's so we are ready to pass the books on :) Even though I haven't heard back, I'm staying positive and doing everything I can with the current situation.

So for this week, I had some time off of school to really reflect and I'm not totally sure I'll be able to complete the third part of my project which is an anti sexual harassment campaign at my school. I'm still going to try cause I feel its really important. As of right now I'm going to try my best to try and complete it but it may change in the future, but that's okay. This year has brought a lot of new challenges that I've had to work around and obviously if I can't do everything I originally wanted, its okay:) Anyway this week I made a lost pf ideas for the project at school. I'm really proud of myself because I know how important this issue id and I'll do everything I can to try and complete this project.

Today I make a list of all the books I think the boys at Mason will like! Once the librarian gets back to me, I'll be able to make a more accurate list but I honestly think its always good to have somewhere to start!
